The first time I had Barramundi was in Queensland in 1987. After a day of exploration in Daintree Rainforest, our local guide was in charge of lunch so he took out a cooler, fired up a skillet on the grill, and put on what I thought was just your average fish. How wrong I was! It was the best fish I had ever tasted and I never forgot how delicious it was. I've only had Barramundi one other time since then. When I saw it on the menu at Collins Quarter, there was no question which dish I would order. The flaky mildness of the white fish and crispiness of the pan- seared skin pairs perfectly with the creamed lentils, artichoke and spinach. Though I have yet to try the other dishes on the menu, and it would be difficult not to keep ordering the Barramundi, I am eager to return and sample the other offerings as well. Thanks to Collins Quarter, I can now have a taste of Australia right here in Savannah.
